Nestled at an altitude of 2,200 meters, in the heart of the Aït Bougmez valley, the Touda vegetable garden is much more than a simple garden: it is a living ecosystem, shaped by the pure mountain climate and our agricultural expertise.
Here, every vegetable, every aromatic herb, and every green leaf grows slowly, nourished by preserved soil and the unique climatic variations of the High Atlas. Cultivated with respect for the seasons and sustainable agricultural practices, this high-altitude garden provides the fresh ingredients that inspire our homemade cuisine every day.

Here, the earth nourishes those who cultivate it, and every harvest tells a story of balance, patience, and respect. It is in this garden, at two thousand meters above sea level, where much of what ends up on your table is born. Vegetables, aromatic herbs, fruits, and grains all grow to the rhythm of the seasons, under the pure sun and the cool nights of the valley. Nothing is left to chance: every seed is chosen, every harvest is done by hand, and every gesture carries the knowledge of the elders.

The products cultivated at Touda Ecolodge supply our kitchen every day. Fresh tomatoes for salads, mint for tea, carrots, potatoes, and zucchini for tagines: here, the cuisine follows the rhythm of the seasons and highlights local products from the High Atlas.
At Touda, the "farm to table" concept takes on its full meaning: there is no distance between the land and the meal. What grows in the morning ends up on your plate in the evening, guaranteeing sustainable, fresh, and responsible nutrition.


Synergy Between Ecotourism and Agriculture in the High Atlas
In the heart of the Moroccan High Atlas, the organic vegetable garden of Touda Ecolodge is central to our approach to ecotourism and responsible food. Fruits and vegetables are grown on-site, without chemicals, respecting the soil and the seasons.
Using a short supply chain, we directly transform our harvests into artisanal jams, natural juices, and jarred vegetables and fruits, illustrating the virtues of a synergy between ecotourism and agriculture.
This local transformation allows us to limit waste, preserve the authentic taste of the products, and offer organic, healthy, and accessible food. Eating well should not be a luxury. Thanks to our know-how, faithful to our philosophy of autonomy and respect for living things, each product reflects our commitment to responsible ecotourism in Morocco, creating value for the territory.
